Decided to break away from organizing for a minute, for a random tidbit.
Bria made a really delicious recipe from Pampered Chef last night that makes the perfect snack for guests.
Sometimes we’re not up for a full-fledged company meal (tired from pregnancy, etc.) but still like to get together with friends/neighbors every now and then.
Fruit salsa and cinnamon chips is the perfect “excuse”.
She just chopped strawberries (we used frozen), bananas and apples, added a little sugar and squeezed a little fresh lemon juice. (We chopped our fruit a little finer than the picture above shows.) You can add other fruits too like kiwi and oranges.
Then, she lightly fried tortillas, sprinkled with cinnamon and sugar and cut like a pizza.
Have some friends over to share! What’s even easier, invite them to sit outside on the porch to enjoy the spring evenings and you don’t feel the pressure to get the house ready!

That sound delicious! Thanks for encouraging us to be more hospitable. I need that little push. If my house isn’t sparkly clean I start to hesitate about having people (even though I LOVE entertaining once they are there… in a non formal way of course). Not good.
I used to make this all the time for my mother to take to potlucks at work (she’s a teacher)! We always added the kiwi. It was a huge hit–especially with people who were being health concious. We didn’t fry our tortillas–we just sprayed them with Pam, then sprinkled with cinnamon sugar and baked in the oven until crisp. 🙂

I was wondering if I could bother you to ask Bria if she used corn or flour tortillas. I am sure it is not an earth shattering difference, but I see she fried them, and I would like to try that, without wasting a lot of food that doesnt turn out right. Normally, I use corn (healthier) and bake them as someone else suggested. But, id liek to try the pampered chef recipe as close as i can. Im consdiering having a 40th bday party for myself, and need nice SPRING easy ideas such as this for entertaining. Poeple may not come if I dont feed them! lol.

She used the whole wheat flour ones…the plain flour ones bubble up a little more, I think, but we actually liked the ww ones better. Happy Birthday! You’ll love this recipe.
mmmmmm…..healthier yet. Dont tell Bria, but I think for my party I will use the white flour ones…..I dont wanna disappoint her. lol.
I am terrible at ‘entertaining’. My version is rip open the bags of chips and order pizza. And pull out a deck of cards. lol.
Perhaps I should make an experiment out of it….have 3 darlings each fry up a different kind of tortilla, and see which one wins the ‘taste contest’. 🙂

Corn tortillas are so healthy and easy, I amy just do a weeks worth of corn tortilla recipes on my blog. Hey, anything to save a few bucks. My girls decided they want to try a pizza tortilla….I wonder if they exist? hahaha.

Our family has been making this recipe for years. We love it! Sometimes we use it with the chips, but our favorite way is to serve it on our Saturday morning waffles (a family tradition here). A little bit of plain yogurt on top really finishes it off. It’s a healthy breakfast that looks good enough to be featured on the cover of a magazine!
